Food, food, food

GDMs co-founder, Mary White, was born in Coxsackie, New York – just below Albany (the capital) and three hours straight up the Hudson River (north) from NYC. Mary has recreated her traditional family dinner many times in Australia … Stuffed Turkey with Cranberry Sauce and Gravy, Mashed Potatoes, Green Beans with almond slivers, Candies Carrots, Baby mint peas and Fruit Cake for dessert. But the all-time family favourite has always been this special dish! Serves 6-8

Sweet Potato Casserole- USA

INGREDIENTS:
  • 2 ½ cups cooked and mashed sweet potatoes
  • 45g/¼ cup brown sugar
  • 1 small can (5 ounces, about ½ cup plus 2 tablespoons) evaporated milk
  • 1 teaspoon vanilla
  • 3 eggs, beaten
  • 1 ½ teaspoons cinnamon or nutmeg or ginger
  • Mini marshmallows 
METHOD:
  1. Mix butter, potatoes, sugar and evaporated milk until well blended. Add vanilla, eggs and cinnamon; mix well.
  2. Pour into a greased baking dish.
  3. Bake for 30 minutes in a medium oven or until heated through, stirring a few times.  
  4. Top with mini marshmallows and return to the oven until marshmallows are golden brown – about 10 minutes.
