Food, food, food

This rich, spongy dessert is a favourite Christmas treat in South Africa. It doesn’t require any fancy ingredients and leftovers (if it’s possible there are any!) are even better the next day! Serves 4-6. Easy to double.

Malva Pudding – South Africa

INGREDIENTS:
Pudding Ingredients:
  • 235ml/1 cup milk
  • 1 ½ dessertspoons Apricot Jam
  • 125g/ cup plain flour
  • 1 teaspoon baking powder
  • 200g/ ½ cup caster sugar
  • 1 teaspoon baking/bicarbonate of soda
  • 1 egg
Syrup Ingredients:
  • 200g/1 cup castor sugar
  • ½ cup boiling water
  • 120ml /1 cup milk
  • 115g/4ox butter
  • A couple of drops of vanilla extract or one vanilla pod 

METHOD:
Pudding Method:
1:         Beat the egg and sugar together. In a separate bowl, mix together the jam, flour and baking powder and add to the egg and sugar mixture.
2:        In another bowl, mix the milk and baking/bicarbonate of soda together and add to the above mixture.
3:         Grease a deep round dish (approx. 19cm) or pudding dish of your choice and pour in mixture. Bake for 40 minutes at 180°C/350°F or microwave on high for six minutes.

​Syrup Method:
1:         Bring all the ingredients to the boil in a saucepan. Carefully remove the vailla pod if using. Pour over the pudding while still hot from the oven.
2:         Serve with custard, ice-cream and/or whipped cream. Pomegranate seeds and mint leaves make a festive decoration.
