Food, food, food

Sweet/Salty/Bitter - A perfectly balanced combination of our three taste sensations. Serve as a dip for fruit or drizzled over ice cream and desserts such as Profiteroles.
Makes 2/3 cup – easy to double or triple. 

Easy chocolate coffee sauce

INGREDIENTS:
  • 1/2 cup (125 mL) cocoa, sifted
  • 1/2 cup (125 mL) icing sugar, sifted 
  • 1/2 cup (125 mL) whipping cream/cooking cream
  • 1 tsp (5 mL) ground coffee
  • 1 tsp (5 mL) vanilla extract 
  • Pinch of salt
METHOD:
  • Whisk together cocoa powder and icing sugar in heatproof bowl; set aside.
  • Heat cream in small saucepan over medium heat, 2 to 3 min., until steaming. Or heat in microwave on HIGH 45 sec., or until hot.
  • Pour over cocoa mixture. Whisk until smooth. Stir in ground coffee, vanilla and salt. (Note: If sauce is too thick, stir in more cream. If too thin, stir in additional sifted icing sugar.) Use sauce warm or at room temperature. Cover and keep refrigerated up to 1 week.
