Sweet/Salty/Sour
Sweet and tropical - the perfect combination. Serves 4-6
Baked bananas with orange and cinnamon sauce

METHOD:
Substitute apricots or peaches and dried figs for the bananas and pear or apple juice for the orange to suit dietary requirements.
- Preheat oven to 180C/350F.
- Arrange bananas in a baking dish large enough to hold them in one layer.
- In a mixing bowl, stir together orange juice and coconut milk and pour over the bananas.
- Sprinkle them with the maple syrup, cinnamon and cardamom.
- Scatter the raisins, almonds and butter on top.
- Bake for 25 minutes.
- Carefully transfer the banana halves to serving plates or bowls and spoon the sauce from the baking dish over.
