Sweet/Salty/Sour
Sweet and tropical - the perfect combination. Serves 4-6
Baked bananas with orange and cinnamon sauce

INGREDIENTS:
  • 4-6 ripe bananas, peeled and sliced in half lengthways
  • Juice of two oranges
  • ¼ cup coconut milk
  • 2-3 tablespoons maple syrup or 1 ½ tablespoons raw sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground cardamom
  • 1/3 cup seedless raisins
  • 1/3 cup flaked almonds
  • 1 tablespoon unsalted butter, cut into small pieces
METHOD:
  • Preheat oven to 180C/350F.
  • Arrange bananas in a baking dish large enough to hold them in one layer.
  • In a mixing bowl, stir together orange juice and coconut milk and pour over the bananas.
  • Sprinkle them with the maple syrup, cinnamon and cardamom.
  • Scatter the raisins, almonds and butter on top.
  • Bake for 25 minutes.
  • Carefully transfer the banana halves to serving plates or bowls and spoon the sauce from the baking dish over.  
 
Substitute apricots or peaches and dried figs for the bananas and pear or apple juice for the orange to suit dietary requirements.
