4 Ingredient Christmas Turkey

INGREDIENTS:
  • 2 kg/4.5 pounds free range, bone-in turkey crown
  • ¼ cup extra virgin olive oil
  • 2 x 500 gms/2 x 1 pound bags mini potatoes (or buy the equivalent weight in baby potatoes)
  • 1 tbsp sea salt flakes
DIRECTIONS:
  1. Preheat oven to 180°C/350°F.
  2. Put turkey crown in a roasting pan.
  3. Drizzle with 1 tbsp of the oil.
  4. Cook following pack instructions.
  5. Meanwhile, line an oven tray with baking paper.
  6. Microwave potatoes following pack instructions, or cook baby potatoes in boiling water for 10-12 minutes.
  7. Open bag to allow potatoes to cool.
  8. When cool enough to handle, cut into quarters or if using baby potatoes cut into serving sizes pieces.
  9. Put on prepared tray, drizzle with remaining oil and sprinkle over salt flakes.
  10. Roast for 35 minutes or until golden and crisp.
  11. Serve turkey with roast potatoes on the side.
