Tuna and tomato pasta

Serves :  4  ›  Preparation:  5 mins  ›  Cook:  10 mins  

INGREDIENTS


1 250gm can tuna in oil
500gms dried pasta - spaghetti, fettucini or any short noodles
1 bottle/can of plain tomato puree
1 can of tomatoes, chopped
1 brown onion finely diced
2 cloves garlic finely sliced
1 tsp mixed herbs
Black pepper and salt to taste

Optional extras.  Use just one.
1 tbsp salted capers, rinsed
! cup frozen peas
1 tbsp black olives pitted and quartered
1 tpsn chopped parsley
Handful of torn basil leaves



 

METHOD
Salute the onions, garlic, mixed herbs and optional extra, if using, in 1 tbsp olive oil until transparent.  Add the entire can of tuna, including the oil and juices.  Mix to combine.  Add the tomato puree and tomatoes and mix again.

Meanwhile bring a large saucepan of salted water to the boil.  Cook the pasta until it's done to your liking.

Add the drained pasta to the sauce.  Mix well and serve with freshly ground black pepper on top.
