TOMATO RELISH

Makes about 12 x 300ml jars.  

2kg ripe tomatoes
2kg onions, white or brown
4 cups white wine vinegar
2 dspns salt
4 heaped dspns dry mustard
4 heaped dspns curry powder such as Madras
4 cups sugar
2 heaped tablespoons tomato paste
4 heaped dspns cornflour
4 tspns turmeric powder
Skin and chop tomatoes and slice onions thinly.  Place in a pan or stockpot and add other ingredients.
 
Bring to the boil, and then simmer for one hour, stirring occasionally so it does not catch and burn.
 
Mix the  cornflour and turmeric with a little water to form a paste.  Remove the pot from the heat and stir in the paste, mixing well.  Replace the pot on the stove and bring to the boil.  Simmer gently for 5 minutes stirring constantly.
 
Bottle and seal in  hot sterilized jars.
