Roast Honey Pumpkin

INGREDIENTS: Serves 8
  • 1kg/2 pounds pumpkin, cut into 8 wedges
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 clove garlic, crushed
DIRECTIONS:
  1. Preheat oven to 200°C/180°C fan forced.
  2. Line a roasting pan with baking paper and place the pumpkin slices on it.
  3. Whisk the oil, honey and garlic in a bowl.
  4. Drizzle over the pumpkin and turn to evenly coat.
  5. Roast pumpkin, turning occasionally, for 40 minutes or until golden and tender.
  6. Transfer to a serving platter. Season with salt.
