Good morning greens

Serves :  2  ›  Preparation:  10 mins  ›  Cook:  20 mins
​Ingredients:

  • 4 large eggs (50g each)
  • 1/2 cup broccoli florets (90g)
  • 1 small zucchini (100g), grated
  • 60g feta cheese, crumbled
Preheat the oven to 180C. Place the first 3 ingredients in a food processor or blender. Blend gently to combine, then mix in the feta.

Season with herbal vegetable salt and a pinch of cayenne pepper. Divide between two 250ml ovenproof ramekins. Bake for 20 minutes or until golden and set.
