Wayne Thiebaud - Cakes
Wayne Thiebaud (born November 15, 1920) is an American painter widely known for his colorful works depicting commonplace objects, such as pies, lipsticks, paint cans, ice cream cones, pastries, and hot dogs, as well as for his landscapes and figure paintings. Thiebaud is associated with the pop art movement because of his interest in objects of mass culture, although his early works, executed during the fifties and sixties, slightly predate the works of the classic pop artists. Thiebaud uses heavy pigment and exaggerated colors to depict his subjects, and the well-defined shadows characteristic of advertisements are almost always included in his work.
Suggested by the pop-art of Wayne Thiebaud, this classic 'pound' cake is beloved of home cooks. Serves 4

INGREDIENTS:
  • 50g (4 tbsp) butter, room temperature
  • 150g (2/3 cup) caster sugar
  • 5 eggs, room temperature, separated
  • Zest (finely chopped) and juice of 1 lemon
  • 1 teaspoon baking powder
  • 160g (generous 1 cup) plain flour
  • 4  plums, halved and stones removed
  • Pinch salt
  • ½ cup pouring cream
  • Extra caster sugar
  • Ice cream to serve
DIRECTIONS:
  1. Heat oven to 180C/350F. Grease a loaf tin.
  2. Separate eggs.  Whip butter with ¾ of the sugar, egg yolks, lemon zest and juice until creamy.
  3. Whip egg whites, salt and remaining sugar until stiff peaks form. In a bowl, mix baking powder and flour together. Carefully fold the flour and egg whites into the creamed mixture. Place mixture into the tin.
  4. Push the plums evenly into the top of the mixture. Drizzle the cream over the mixture and sprinkle with the extra caster sugar.  
  5. Bake for approximately 50 minutes. Serve with creamy ice cream. 
You can also use apples in place of plums.
