Fancy fritters
Fritters are so easy to whip up quickly and the range of flavours is almost endless. They're great as a snack, a starter or a dessert. Here are a few of our favourites.
BASIC BATTER
Ingredients
Heat 2 tbsps oil in a medium frying pan on medium heat. For fritters with chunky ingredients, make each fritter with 1/4 cup of batter and cook first side for 2-3 minutes until golden. Turn and cook for a further 1 minute until brown and cooked through. Drain on paper towel.Repeat with remaining batter, topping up with oil and reheating between batches if necessary, |
VARIATIONS
Zucchini and Herb
Into your Basic Batter mix, stir 2 grated zucchini, 1/2 cup grated parmesan, 1 crushed garlic clove and 1/4/ cup chopped flat-leaf parsley.
Cumin, Carrot and Feta
Into your Basic Batter mix, stir 2 grated carrots, 100gms crumbled feta, 1 crushed garlic clove and 1 finely chopped onion. Serve with salad greens and cucumber raita.
Smoked Trout and Pea
Into your Basic Batter mix, stir 200gms flaked, smoked trout, 1/2 cup peas, 2 thinly sliced green onions, juice of 1/2 lemon, 2 tbsps finely chopped dill and black pepper.
Ricotta, Corn and Bacon
Cook 2 finely chopped, rindless bacon rashers on medium heat for 4-5 minutes until lightly browned. Add to your Basic Batter with 200gms ricotta, 1 cup canned corn kernels and 1/4 cup finely chopped basil and mix well.
Kumara, Chickpea and Coriander
Into your Basic Batter mix, stir 200gms peeled and grated kumara (red sweet potato), 420gm can of chickpeas drained and rinsed, 1 finely chopped red onion, 1/2 cup finely chopped coriander, 1tsp ground cumin and 1 crushed garlic clove. These are wonderful served with hummus and a green salad.
Curried Cauliflower
Chop 400gms cooked cauliflower florets. Lightly mash in a large bowl. Add 1 cup self-raising flour, 1/2 tsp garam masala, 1/4 tsp ground tumeric and 1 lightly beaten egg. Mix well.
Banana and Cinnamon
Into your Basic Batter mix, stir 2 large mashed bananas, 1/3 cup firmly packed brown sugar and a pinch of cinnamon. Serve with honey and yoghurt.
Spiced Apple and Date
Into your Basic Batter mix, stir 3 peeled, cored and grated apples, 1/4 cup pitted and chopped fresh dates, 1/3 cup firmly packed brown sugar and a pinch of mixed spice. Serve with custard or icecream.
Orange and Poppy Seed
Soak 1 tbsp poppy seeds in 2 tbsp milk for 10 minutes. Make a Basic Batter substituting 2/3 cup orange juice for the milk. Stir in poppy seed mixture, 2 tsp finely grated orange zest, 1/3 cup caster sugar and 200gms fresh ricotta.
