Easy chicken tiros

Serves :  6  ›  Preparation:  60 mins  ›  Cook:  20mins

Ingredients
500gms chicken thigh or leg fillets
6 pita wraps
3 ripe tomatoes
Shredded lettuce
Finely sliced red onion
 
Marinade
1 lemon, juiced
50ml white wine vinegar (use white wine if that is what you have)
3 Teaspoons olive oil 
1 level teaspoon salt 
2 teaspoons garlic powder
OR use 2 fresh chopped cloves instead
1 teaspoon ground pepper 
3 teaspoons smoked paprika 
4 teaspoons oregano  
 
Tzatziki sauce
½ cup plain Greek-style yoghurt
125g Greek-style feta cheese
1 tbsp lemon juice
1 garlic clove, minced
1 Lebanese cucumber, seeded, coarsely grated and drained

Combine marinade ingredients in a bowl.
 
Trim thigh fillets of any fat and cut into small pieces..  Marinate the chicken pieces in the fridge for at least an hour.
 
For tzatziki sauce, put yoghurt and feta in a bowl and blitz with a stick blender until smooth. Add lemon juice, garlic and blitz again to mix. Add cucumber and stir through. Season with salt and pepper if required.
 
Drain chicken from marinade and place on paper towel to dry out a little.
 
Heat a large frying pan and add 2 tbspns olive oil.  When the oil is just smoking add the chicken in small batches and cook quickly from until beginning to brown. Rewarm in the microwave if necessary.
 
Warm the pita bread in the microwave for 15-20 seconds.
 
Serve the chicken with the warm pita, sliced tomato, sliced red onion, shredded lettuce and tzatziki sauce and let everyone assemble their own yiros.
