Creamy pasta sauce

This classic sauce has just four ingredients and can be ready in the time it takes to cook pasta or rice. Or why not serve it over a baked potato?
Serves 4

INGREDIENTS:
  • 4 shallots finely chopped
  • 4 bacon slices rind removed and chopped
  • 200g button mushrooms sliced
  • 250ml cream for cooking softened
DIRECTIONS:
  1. Combine shallots and bacon in large frying pan over a moderate heat and cook, stirring until the bacon is crisp.
  2. Add mushrooms and stir until softened.
  3. Add Cream for cooking and simmer for 5 to 7 minutes allowing the flavours to meld.
  4. Season to taste.

Chef's note: Mushrooms are a lean protein source as they have zero cholesterol, fats and very low carbohydrates. Never peel mushrooms as most of the vitamin B12 (the energy superstar) is present on their surface. To this yummy sauce, add some freshly chopped parsley for colour and flavour.
