4 Ingredient Christmas Pudding

Preparation: 30min  ›  Cook: 1hour30min  ›  Extra time:8 hours soaking Ready in:10hours 

INGREDIENTS:
  • 1 kg dried mixed fruit
  • 2 cups (500ml) pure orange juice
  • 2 cups (250g) self raising flour
  • 1 heaped teaspoon mixed spice
DIRECTIONS
  1. Place the fruit and orange juice in a large ceramic bowl. Stir well, cover and let soak overnight in the fridge.
  2. Next day, preheat oven to 150 degrees C/300 F. Grease a large pudding mould or basin.
  3. Add flour and spice to the soaked fruit and mix well.
  4. Pour into prepared mould and bake 1 ½ -2 hours. If it is browning too fast, drape with foil.

Serve with brandy custard, cream or your choice of accompaniment.
