Boxty

 Boxty is a traditional Irish potato pancake that contains a mixture of mashed and grated potatoes, resulting in a unique texture that’s part pancake, part hash brown. While always included on an Irish breakfast table, Boxty is also popular with savoury canapés and appetisers. Try them instead of blini, topped with smoked salmon and crème fraîche. 
Preparation:  10 mins  Cook: 8-10 mins

INGREDIENTS
  • 1 ½ cups grated raw potatoes
  • 1 cup leftover mashed potatoes
  • 1 cup plain flour
  • 1 egg, lightly beaten
  • 1 tablespoon milk
  • ¼ cup oil (EVOO or Canola)
  • Salt and pepper
  • Toss the grated potatoes with flour in a large bowl.  Stir in the mashed potatoes until combined. In a separate bowl, whisk together the egg and milk, then mix into the potatoes. Season to taste with salt and pepper. 
  • Heat the oil in a large frying pan over medium heat. Drop in the potato mixture forming patties about 6 cm in diameter. Fry on both sides until golden brown, about 3 – 4 minutes per side. Drain on paper towel. Service warm.
