INGREDIENTS
  • 1 3/4 cups (430ml) brewed black tea, cold
  • 1 1/2 cups (220g) light brown soft sugar
  • 1 cup (180g) sultanas
  • 1/4 cup (60g) chopped candied peel
  • 1 1/4 cups (155g) self raising flour
  • 1 egg, whisked
  • Put the tea, sugar, sultanas and peel into a bowl. Cover and leave to soak overnight.
  • Preheat oven to 180 degrees C. Grease and flour a 20cm round cake tin.
  • Sift the flour into the fruit mixture. Add the egg and beat well. Pour into the cake pan.
  • Bake in preheated oven for 1 hour and 45 minutes or until skewer inserted into centre of cake comes out clean. Leave in the tin for 5 minutes then turn out onto a wire rack to cool.
