Baked cheese and herb cubes

Bite size savouries that are super easy to make and bake but will provide a plateful of excuses to mingle with your neighbours!

INGREDIENTS
  • Loaf of wholegrain bread, unsliced
  • 2 eggs
  • 15g/1 ½ tablespoons melted butter
  • 2 teaspoons finely chopped parsley
  • 2 teaspoons finely chopped thyme
  • Salt and pepper
  • Tabasco sauce or cayenne pepper
  • ¾ cup grated cheddar cheese
  • ½ cup finely grated parmesan cheese
DIRECTIONS:
  1. Remove crusts from bread and cut into 2 cm (1 inch) cubes.
  2. Combine eggs, butter, parsley and thyme, salt, black pepper and tabasco sauce or cayenne pepper (to taste) in a small bowl. Whisk until well combined.
  3. Dip the bread cubes into the egg mixture and roll in combined cheddar cheese and parmesan cheese. Place on a tray, cover and refrigerate several hours or overnight.
  4. Preheat oven to moderate. Place cubes on an oven tray lined with baking paper. Bake for 8 – 10 minutes or until golden and slightly crusty.
  5. Sprinkle with ground paprika before baking if desired.
