These Austrlian cookies are normally made with real butter but they'rte jut as tasy and successful when make with a vegan substitute.
Vegan Anzac biscuits
METHOD:
- Preheat oven to 180° or 160° fan forced
- Add oats, coconut, flour and sugar to a bowl and stir until well combined
- Melt butter in a saucepan over low heat and add golden syrup
- In a mall bowl add hot water to bi carn soda and stir until dissolved. Add this to the melted butter mixture
- Add butter mixture to the dry mixture and stir well with a wooden spoon
- Roll mixture into little balls, slightly flatten and place on a lined baking tray, about 2cms apart
- Bake 12-14 minute until golden brown
