These Austrlian cookies are normally made with real butter but they'rte jut as tasy and successful when make with a vegan substitute.

Vegan Anzac biscuits

INGREDIENTS: ​
  • 1 cup oats
  • ¾ cup desiccated coconut
  • 120 gms plain flour
  • 100 gms caster sugar
  • 1 tsp carb soda
  • 2 tbsp hot  water
  • 100 gms vegan butter, margarine or coconut oil
  • 2 tbsp maple syrup or golden syrup
METHOD:
  1. Preheat oven to 180° or 160° fan forced
  2. Add oats, coconut, flour and sugar to a bowl and stir until well combined
  3. Melt butter in a saucepan over low heat and add golden syrup
  4. In a mall bowl add hot water to bi carn soda and stir until dissolved. Add this to the melted butter mixture
  5. Add butter mixture to the dry mixture and stir well with a wooden spoon
  6. Roll mixture into little balls, slightly flatten and place on a lined baking tray, about 2cms apart
  7. Bake 12-14 minute until golden brown
