The perfect lunchbox snack or a delight to enjoy with afternoon tea! Easy to make and back in 30 minutes. Makes 3 dozen.

Apricot Dream Cookies

INGREDIENTS: ​
  • 1 ¼ cups plain (all-purpose) flour
  • ¼ cup baking powder
  • ¼ teaspoon salt
  • ½ cup butter (or margarine) softened
  • 3 oz (85g) cream cheese, softened
  • ½ cup flaked coconut
  • ½ cup apricot jam (preserve)
  • 1 cup powdered (caster) sugar
  • ¼ apricot jam (extra)
  • 1 tablespoon butter (or margarine) softened (extra)
METHOD:
  1. Preheat oven to 350F/180C.
  2. Combine flour, sugar, baking powder and salt in a food processor. Pulse in butter and cream cheese until mixture is crumbly.
  3. Add coconut and ½ cup of jam. Blend until just moistened. Be careful not to overmix the batter. Cookies should be light and airy.
  4. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 15-18 minutes.
  5. TO MAKE THE FROSTING:
  6. In a small bowl, combine the caster sugar, jam and butter. Spread on the cookies after they have cooled.
