Apricot Dream Cookies

METHOD:
- Preheat oven to 350F/180C.
- Combine flour, sugar, baking powder and salt in a food processor. Pulse in butter and cream cheese until mixture is crumbly.
- Add coconut and ½ cup of jam. Blend until just moistened. Be careful not to overmix the batter. Cookies should be light and airy.
- Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 15-18 minutes.
- TO MAKE THE FROSTING:
- In a small bowl, combine the caster sugar, jam and butter. Spread on the cookies after they have cooled.
