4 Ingredient Glazed Salmon with Zucchini

INGREDIENTS:
  • 4 zucchini
  • 4 skinless salmon fillets (4 ounces/120 grams each)
  • Grainy mustard
  • Orange marmalade
DIRECTIONS:
  1. Quarter zucchini and brush with olive oil.
  2. Season zucchini and salmon fillets and broil on an oiled rimmed baking sheet until salmon is opaque throughout, about 5 minutes.
  3. Combine equal parts mustard and marmalade, brush on salmon, and broil 1 to 2 minutes more.
